(K) Kangaroo Bread


I'm not from Australia, Mateys, but I do love koala bears, safaris and kangaroo bread.
And today I'm going to share with you my favorite lunch-time snack made with this amazing and versatile bread- also known as pitas or pocket bread.


You will need:
1 or 2 -whole salad pockets (or 4 halves). This will serve two people. Or one really hungry person)

 










2 cups- chopped lettuce ( I like to buy mine already shredded in the convenience packs, but that's just me.)

1/4 cup- raisins

1/2 cup- fresh sliced strawberries

1/4 cup- shredded sharp cheddar cheese (or cheese of your choice) Maybe even Feta.

1 handful or so -chopped walnuts

1 bottle- Kraft Poppy Seed Dressing (you will not use all of this)


I put all the ingredients -except the dressing- in a large bowl and toss together.

Then I add the poppy seed dressing to my liking. (I like mine almost saturated, but just add enough to achieve the moistness and taste that you prefer).

Mix well. Season with salt and pepper to taste. (It usually doesn't need salt, but I wanted to sound like Paula Deen).


I like to pre-warm my salad pockets in the microwave for 15 seconds or so. If they are whole pitas, I cut them in half first. This makes them softer and more pliable and easier to fill.

Then I stuff the pockets full of the salad mixture, grab plenty of napkins- (and a fork for the spillage)- and enjoy!

eaten lots of Pittas but never heard of them being called Kangaroo bread before. Strange how places call the same thing different names.

I really need to pick up some Pita Bread. I LOVE that stuff! :) Though I prefer mine to be stuffed with lamb and Tadziki Sauce. :)

Your salad in a pita sounds so good and with the fresh strawberries, I'll bet it's delish! Of course, I walked past the strawberries yesterday at the grocery store. Oh, well, I'll be back later in the week. Happy K day!
